Press wine is extracted by mechanically pressing grape skins after fermentation drains the free-run wine. It's typically darker, more tannic, and more extracted than free-run. Press fractions are often kept separate and blended back selectively to add structure. Heavy pressing extracts harsh tannins and bitterness.
