Extraction is the process of drawing color, tannins, and flavor compounds from grape skins, seeds, and sometimes stems during maceration and fermentation. Techniques include cold soaking, punch downs, pump overs, extended maceration, and pressing decisions. Over-extraction produces harsh, bitter wines; under-extraction yields thin wines.
