Full Definition

Pressing extracts juice from grapes (for whites) or wine from fermented skins (for reds). Press types include basket, bladder (pneumatic), and continuous screw presses. Gentle pressing extracts cleaner juice; harder pressing adds phenolics. Multiple press fractions may be kept separate and blended selectively.
