Full Definition

Ice wine is made from grapes naturally frozen on the vine and pressed while frozen. Water remains as ice, concentrating sugars and acids in the juice. German Eiswein and Canadian icewine are the benchmarks. Production is weather-dependent and risky. Wines are intensely sweet with balancing acidity and can age for decades.
