Isinglass is a fining agent derived from fish swim bladders, traditionally used for white wines. The collagen protein binds with tannins and suspended particles, settling them out. Preferred for delicate whites where stronger agents might strip flavor. Not vegan; alternative agents include bentonite and pea protein.
