Full Definition

Eiswein (ice wine) is made from grapes naturally frozen on the vine, harvested and pressed while frozen. Water remains as ice, yielding intensely concentrated, sweet juice. Authentic Eiswein requires temperatures below -7C and is risky to produce. Germany, Austria, and Canada are primary producers.
