Indigenous (native, wild, or ambient) yeasts are naturally present on grape skins and in wineries, as opposed to commercial cultured yeasts. Fermentation with indigenous yeast is slower and less predictable but can produce more complex, terroir-expressive wines. Risk includes stuck fermentation and off-flavors.
