Full Definition

Late harvest wines are made from grapes left on the vine past normal harvest to concentrate sugars, often becoming sweet wines. The grapes may dehydrate on the vine or develop botrytis (noble rot). German terms include Spatlese (late harvest) and Auslese (select harvest). Not all late harvest wines are sweet.
