Full Definition

Extract refers to everything in wine except water, alcohol, and acids - sugars, phenolics, glycerol, minerals, and other compounds that contribute to body, texture, and flavor intensity. High extract wines feel dense and substantial. Extract is influenced by yield, ripeness, and winemaking technique.
