Aromatic compounds formed during fermentation.
Full Definition
Esters are volatile compounds formed when acids react with alcohols during fermentation. They contribute fruity and floral aromas - ethyl acetate (nail polish/solvent at high levels), isoamyl acetate (banana), and many others. Ester production depends on yeast strain, fermentation temperature, and nutrient availability.
