Elevage (literally 'raising' or 'upbringing') encompasses all cellar work between fermentation and bottling: aging in barrel or tank, racking, fining, blending. Good elevage allows wine to develop complexity and stability. The winemaker's choices during elevage significantly shape the final wine.
