Full Definition

Vinification encompasses all winemaking processes from grape reception through fermentation to the point wine is ready for aging or bottling. It includes crushing, pressing, fermentation, and immediate post-fermentation treatments. Different vinification techniques produce dramatically different wines from the same grapes.
