Vegetal describes aromas of vegetables - bell pepper, asparagus, green beans, or herbaceous qualities. Light vegetal character is varietal for Cabernet Sauvignon and Sauvignon Blanc (from pyrazines). Pronounced vegetal notes often indicate underripe grapes or excess vigor. Context determines if it's characteristic or fault.
