Physiological (phenolic) ripeness occurs when grape skins, seeds, and pulp reach full flavor maturity, beyond simple sugar accumulation. Signs include brown seeds, easily detached stems, and ripe tannins. Harvesting at physiological ripeness prevents green, harsh character even in high-sugar fruit.
