Harvest (vendange in French, vendimia in Spanish) is the grape-picking season, usually August-October in Northern Hemisphere, February-April in Southern. Harvest timing is critical - too early yields unripe flavors, too late risks overripeness or rot. Harvest can be mechanical or by hand, with hand-harvesting preferred for premium wines.
