Hang time is the period between veraison and harvest when grapes hang on the vine ripening. Extended hang time allows greater phenolic development, sugar accumulation, and flavor concentration. However, excessive hang time risks overripeness, high alcohol, and loss of acidity. Optimal hang time varies by variety and style goals.
