Full Definition

Eaux-de-vie ('water of life') are clear, unaged fruit brandies distilled from fermented fruit. While not wine, they're related to wine production through grape-based varieties. Used in fortification (neutral spirits) and as digestifs. Examples include kirsch (cherry), framboise (raspberry), and marc (grape pomace).
