Fortification adds neutral grape spirit (brandy) to wine, raising alcohol content. When added during fermentation, it kills yeast and preserves sweetness (Port, most Madeira). When added after fermentation, it produces dry wines (Sherry, Vin Doux Naturel). Fortified wines typically reach 15-22% ABV.
