Full Definition
Stalky describes green, vegetal, bitter flavors extracted from grape stems during fermentation. Whole-cluster fermentation intentionally includes stems for structure and spice; excessive stalky character suggests unripe stems or over-extraction. Can be positive in small amounts, negative in excess.
