Full Definition
Saignee ('bleeding') drains a portion of juice from red wine fermentation tanks early, before significant extraction. This juice becomes rose, while the remaining red wine gains concentration from higher skin-to-juice ratio. Saignee rose tends to be darker and more structured than direct-press rose.
