Heat damage occurs when wine is exposed to high temperatures (above 75-80F) causing premature aging, cooked flavors, and oxidation. Signs include pushed-out corks, leakage, and stewed fruit character. Proper storage at 55-60F is essential. Heat damage is irreversible and a significant quality fault.
