Oxidation is the chemical reaction between wine and oxygen. Controlled oxidation is essential for aging, softening tannins and developing complexity. Excessive oxidation causes spoilage: browning color, flat aromas, sherry-like character, and loss of fruit. Intentional oxidative aging occurs in Sherry, Madeira, and some Jura wines.
