Racking transfers wine from one container to another, leaving behind settled sediment (lees). This clarifies wine and prevents off-odors from decomposing lees. Multiple rackings may occur during elevage. Less racking maintains more texture and freshness (sur lie style). Air contact during racking can be minimized or maximized depending on goals.
