Full Definition
AOC (now AOP under EU rules) is France's quality wine designation system, regulating geographic boundaries, permitted grape varieties, maximum yields, minimum alcohol, and winemaking practices. Established in 1935, it became the model for wine laws worldwide. Not a guarantee of quality, but of authenticity and typicity.
