Full Definition
DO (Denominacion de Origen) is Spain's regulated wine appellation system, equivalent to French AOC. It defines geographic boundaries, permitted grapes, yields, and winemaking practices. Higher tiers include DOCa/DOQ (Rioja, Priorat) and Vino de Pago for single estates. Below DO are IGP and table wine categories.
