Sur lie ('on the lees') aging keeps wine in contact with dead yeast cells after fermentation. This adds body, creaminess, and complexity through autolysis - yeast cell breakdown releasing compounds. Important for Muscadet (where it's legally defined), white Burgundy, and Champagne. Often combined with batonnage.
