Over-extracted wines have harsh, bitter tannins from excessive maceration, pressing, or punch-downs. The wine may taste aggressive, astringent, and unbalanced. Common in wines pursuing concentration without finesse. Unlike firm young tannins that soften, over-extracted character often doesn't improve with age.
