Oenology (or enology) is the scientific study of wine and winemaking, encompassing chemistry, microbiology, fermentation science, and cellar practices. An oenologist or winemaker applies these sciences professionally. Major oenology programs exist at UC Davis, University of Bordeaux, Geisenheim, and Adelaide.
