Fresh, green, herbaceous character like cut grass.

Full Definition

Grassy describes aromas and flavors of fresh cut grass, green herbs, or meadow. Found in Sauvignon Blanc, Gruner Veltliner, and underripe wines. Caused by methoxypyrazines, compounds also creating bell pepper notes. Can be positive (fresh, herbal) or negative (underripe, vegetal) depending on intensity.
