Disgorgement

/dis-GORJ-muhnt/

Removing sediment from sparkling wine after secondary fermentation.

Full Definition

Disgorgement (degorgement) removes the yeast sediment from sparkling wine after secondary fermentation and aging on lees. The bottle neck is frozen, the cap removed, and pressure expels the frozen plug of sediment. Dosage is added, and a permanent cork inserted. Some wines are disgorged to order for maximum freshness.
