Botrytized wines are made from grapes affected by Botrytis cinerea (noble rot), which concentrates sugars and adds distinctive honeyed, marmalade character. Examples include Sauternes, Tokaji, and TBA/BA German wines. The fungus is labor-intensive to manage and only forms in specific microclimates.
