Blanc de Noirs ('white from blacks') is white or pale pink sparkling wine made from red grape varieties, usually Pinot Noir and/or Pinot Meunier in Champagne. The juice is quickly pressed off the skins to minimize color extraction. These wines tend to be fuller-bodied with red fruit notes.
