Baked describes wines with a cooked, raisiny character, either from excessive heat during grape growing, poor storage (heat damage), or intentional winemaking (Madeira). In table wines, it typically indicates overripe grapes or heat damage and is considered a fault. In Madeira, baked character is intentional and desirable.
