Attack describes the first impression when wine enters the mouth - the initial burst of flavor and sensation before the mid-palate develops. A strong attack suggests intensity and concentration. Weak attack may indicate a dilute wine. Professional tasters evaluate attack, mid-palate, and finish separately.
