Finish

The taste and sensations that linger after swallowing.

Full Definition

The finish (or aftertaste) is what remains on the palate after swallowing or spitting wine. A long finish - flavors persisting for 30+ seconds - generally indicates quality. The finish may echo the primary flavors or introduce new elements. Short, bitter, or hot finishes are considered faults.
