Full Definition

Sherry is a fortified wine from the Jerez region of southern Spain, made primarily from Palomino grapes. Styles include biological aging (Fino, Manzanilla - aged under flor yeast) and oxidative aging (Oloroso, Amontillado, Palo Cortado). Sweet sherries are made by blending with Pedro Ximenez or sweetening wines. All sherries use the solera system.
