Riddling

Rotating bottles to move sediment for disgorgement.
Full Definition
Riddling (remuage) gradually rotates and tilts sparkling wine bottles to collect yeast sediment in the neck. Traditional hand-riddling uses A-frame wooden racks called pupitres. Modern gyropalettes automate the process. The sediment-laden neck is then frozen for clean removal during disgorgement.
