Traditional method (methode traditionnelle, Classic method) produces sparkling wine through secondary fermentation in the bottle. After base wine bottling with yeast and sugar, bottles age on lees, are riddled, disgorged, and dosed. This is the Champagne method but can't legally use that term. Higher quality than tank method.
