Full Definition

Pet-nat (petillant naturel, methode ancestrale) is sparkling wine bottled before primary fermentation completes, trapping CO2 naturally. No secondary fermentation or dosage added. Results vary from lightly fizzy to fully sparkling, often cloudy with yeast. Popular in natural wine circles. Ancient method predating Champagne.
