Methode Champenoise (traditional method, methode traditionnelle) creates sparkling wine through secondary fermentation in the bottle. Base wine is bottled with yeast and sugar; fermentation creates bubbles; wines age on lees; riddling collects sediment; disgorgement removes it. Only Champagne can use the term 'methode champenoise' - others say 'traditional method.'
