Brett is winemaker shorthand for Brettanomyces, a yeast that produces barnyard, horse blanket, Band-Aid, and smoky aromas. At low levels, some consider it adds complexity (traditional Rhone, older Bordeaux); at high levels, it's a fault. It thrives in barrel environments and is extremely difficult to eradicate.
