Bouvier is a white grape variety grown primarily in Austria and occasionally Slovenia. It produces early-ripening, low-acid grapes susceptible to botrytis, making it suitable for sweet wines. Its neutral character makes it less interesting for dry wines. Named after breeder Clotar Bouvier.
