Assemblage is the art of blending wines from different grape varieties, vineyard parcels, or vintages to create a final cuvee. It's particularly important in Champagne, Bordeaux, and Rhone production. The winemaker tastes individual lots and combines them to achieve balance, complexity, and house style.
