Aged wine has been matured in barrel, tank, or bottle, developing complexity beyond its primary fruit character. Aging allows tannins to soften, colors to evolve, and tertiary aromas (leather, tobacco, earth) to develop. Not all wines improve with age; most are made for immediate consumption.
