Storing wine under proper conditions for aging.
Full Definition
Cellaring means storing wine in conditions suitable for aging: 55F/13C temperature, 70% humidity, darkness, stillness, and horizontal positioning for corked bottles. Not all wines improve with cellaring; most are meant for immediate consumption. Wines with high acidity, tannin, and concentration age best.
