Wood Tannin

Tannin extracted from oak barrels.
Full Definition
Wood tannins (ellagitannins) are extracted from oak during barrel aging, adding to grape tannins (condensed tannins). Wood tannins contribute drier, more aggressive character than grape tannins. New oak imparts more wood tannin. Over time, wood tannins integrate with wine structure.
