Whole bunch (whole cluster) fermentation includes grape stems in the ferment. Stems contribute tannin structure, spice, and complexity when ripe. Unripe stems add harsh, green character. Burgundy and Rhone producers use varying percentages. Requires careful stem ripeness assessment.
