Ouillage is the French term for topping up barrels to replace wine lost to evaporation (the 'angel's share'). Keeping barrels full minimizes oxygen exposure and prevents spoilage. Typically performed weekly to monthly. Some styles (Sherry, vin jaune) intentionally skip ouillage for oxidative character.
