Full Definition

Olfactory refers to smell perception, crucial in wine evaluation since most 'flavor' is actually aroma perceived through orthonasal (sniffing) and retronasal (from palate) pathways. Humans can distinguish thousands of odors. Olfactory fatigue can occur during extended tasting, reducing sensitivity.
