Mousse describes the bubbles and foam in sparkling wine - their size, persistence, and texture. Fine mousse has tiny, persistent bubbles creating creamy texture. Coarse mousse has larger, more aggressive bubbles. Quality sparkling wines, especially those aged on lees, typically show finer mousse. The mousse also releases aromas.
